Koose – A Ghanaian Snack
4oz black eyed peas, peeled
1 medium onion, quartered
1 habanero pepper
1-2 Thai chilis
2-4 Tbsp water
—— if you don’t have already peeled black eyed peas, soak raw peas in a bowl of warm water about 10-20 minutes. Rub peas between your hands to get the skin off. Do this a few times until all the peas are peeled.
—— add peeled peas, onion, habanero, Thai chilis, and 2 Tbsp water to a blender. Purée until smooth. Add water if the mixture is too thick. You’re going for a thicker pancake batter: smooth enough to pour a steady stream but thick enough to hold a shape when scooping.
Salt & pepper to taste
1/4 c chopped onions
Green onions, minced
Corn oil for frying
—— pour peas mixture into a bowl and add green onions, diced onion, and salt and pepper to taste. Mix until well incorporated.
—— heat oil in a deep frying pot or wok on medium heat.
** do not start on a high heat then lower to medium. You want the oil to heat up at a consistent medium heat.
—— once heated, with an ice cream scoop or large spoon, scoop about 1 1/2 to 2 Tbsp of mixture into the oil and fry about 5 minutes on each side or until it’s a deep golden brown color. Let sit on a paper towel lined plate to soak up extra oils and serve. ENJOY!
