Fried Chicken and Mac n Cheese
I was lazy and made Kraft Mac n cheese but hey that stuff is delicious!
For the chicken:
4 chicken legs or breast cut in half
About 1/4 c. pickle juice
1 c. All purpose flour
2 tsp salt
2 tsp black or white pepper
2 tsp garlic powder
2 tsp onion powder
1 tsp paprika
1/2 tsp nutmeg
Egg wash (1 egg + 1 Tbsp water)
Canola oil for frying
**If you’re one of those people that saves bacon grease, add a Tbsp of bacon grease to the oil. Used oil gives a better crisp but fresh oil will still work well.
——Place chicken in a bowl and pour in enough pickle juice to coat the chicken and marinate for 30 minutes to an hour.
**don’t let it sit in a bath of pickle juice or it’ll taste too pickle-y. You just want to coat the chicken in pickle juice.
——Take the chicken out, pat dry, and place on a paper towel lined plate. Let sit in the fridge uncovered to dry out, about 4-8 hours.
**if you’re in a hurry, just pat the chicken dry as well as you can.
—— In a deep pot, heat oil over medium high heat. One at a time coat the chicken in flour, dip in the egg wash to coat, then coat in flour again. You’ll want to use your hand to pack the flour on.
—— once the oil is heated, add the chicken and fry about 8-10 minutes depending on what kind of chicken you used. Let it sit on a paper towel lined plate to soak up any extra oils for a few minutes and serve when cooled enough.
** You’ll know the oil is hot enough when you sprinkle some flour into the oil and it starts fizzing right away.
