Chicken Tikka Masala

1 large chicken breast, 1-inch pieces
1 Tbsp olive oil
—— heat olive oil in a pan on medium high heat. Add the chicken and cook until no longer pink. Reserve some oil in pan and set chicken aside

1 small onion, diced
3 1/2 tsp garlic, minced
1 tsp ground ginger
—— add onion, garlic, and ginger and cook until fragrant, about 3 minutes.

1 1/2 tsp cumin
1/2 tsp turmeric
1 1/2 tsp paprika
1 tsp cayenne pepper
1 1/2 tsp garam masala
1 3/4 c. roma tomatoes, diced
—— add spices and tomatoes to the pan and mix well. Turn heat down to a simmer and let sauce simmer about 15 minutes, uncovered, to allow it to thicken.

1/3 c. Heavy cream
—— add chicken and cream and mix well. Season with salt, if desired. Serve over rice and top with fresh cilantro. Enjoy!

To make rice:
Add 1 cup of rice to a pot and fill with water. Put the tip of your finger at the top of the rice and make sure the water comes up to your first knuckle. If it goes above, take out some water and if it doesn’t reach add more water. Cook on medium heat, covered, until rice is cooked through, about 15-20 minutes.
