Chicken and chickpea pasta
1 c. Chickpea pasta
3 c. Water, boiling
—— boil water in a pot and sprinkle some salt for taste, about a teaspoon or 2. Drizzle oil in and allow to boil before adding pasta.
—— once the water is boiling, add pasta and bring heat down to medium. Let cook about 7 minute or until al dente. Drain water from pasta and put back in the pan on medium heat.
1/2 c. Fresh baby spinach
1/4 c. Heavy cream or milk
Parmesan cheese, shredded
Onion and garlic powder, to taste
—— on medium heat, add spinach, cream, Parmesan cheese, onion powder and garlic powder to pasta and stir until well incorporated and spinach is wilted.
2 chicken thighs
2 Tbsp butter
—— mix the spices in equal parts, enough to season the chicken to your liking. Season chicken to you liking 😃
—— in a pan on medium heat, melt butter and add chicken once the pan is hot. Brown both sides of the chicken and cover to cook.
—— once the chicken is fully cooked, dish yourself some pasta and top with chicken. Enjoy!
