Banana Nut Bread
1/2 c. Butter, softened
3/4 c. Sugar
—— preheat oven to 350* and grease a 9inch bread pan. Cream butter and sugar together until well combined.
2 eggs, lightly beaten + room temp
1/2 tsp vanilla extract
2 ripe bananas, smashed
—— whisk eggs and vanilla into the butter mixture then add the bananas to incorporate.
** you want the bananas to have more black than yellow on the peel.
1 1/2 c. Flour
1 tsp baking soda
1/2 tsp salt
Optional: 1/2 c. Pecans or walnuts
—— sift flour, salt, and baking soda into banana mixture and fold into the batter with a spatula until incorporated. Add your choice of nuts and fold in.
—— Pour mixture into the greased pan and bake for 30-40 minutes or until a knife inserted comes out clean. Enjoy!
